Sweet and Skinny Brownies!
One of my favorite things to bake is brownies! I think it is because you get to lick the bowl....Or it could be because some are gooey and chocolatey, while others may be cake like and chocolatey...and you can put anything in or on them :) This recipe was a regular brownie recipe modified for clean eating.
iNGREDIENTS
- 1/2 cup Oatmeal
- 3 tbsp Organic Coconut Oil
- 1/2 cup Sugar
- 1/3 cup Nonfat Greek Yogurt
- 1 tsp Vanilla Extract
- 1/2 cup Unsweetened Cocoa
- 1 1 Egg
- 1 large Egg White
- 1/3 cup Special Dark Chocolate Chips
DIRECTIONS
1. Mix dry ingredients together
2. Mix wet ingredients together
3. Combine everything together
4. Put in 8 X 9 pan or muffin tin to have pre- proportioned brownies
5. Heat Oven at 350 for about 20 minutes.
6. These can be stored in the freezer if you cannot eat all at once or want to space out eating proportions.

Sort of Vegan Cheesecake
INGREDIENTS
- 12 oz Tofu
- 8 oz PHILADELPHIA CREAM CHEESE 1/3 LESS FAT ( this is the only ingredient non vegan, you can use Tofutti cream cheese if you want the cheesecake completely vegan)
- 2/3 cup Raw Cane Sugar
- 1/2 cup Lemon Juice
- 2 tbsp Organic Cornstarch
- 1 tbsp Pure Vanilla Extract
- 1 cup Sliced Strawberries
- 1/2 cup Dates, pitted
- 1 1/2 cups Walnuts Chopped
DIRECTIONS
You need a food processor. Combine the walnuts and dates, blend in food processor. Press down on a pie pan or 8 x8 rectangular pan. Then in the processor combine all of the other ingredients. Blend until smooth. Pour onto walnut/date crust. Let it firm up in the refrigerator. Add sliced strawberries on top. I was pleasantly surprised at how good this was!

Clean Eating Chocolate Chip Banana Bread
INGREDIENTS
DIRECTIONS
Ground oatmeal in blender or food processor to create oat flour.
Combine all dry ingredients.
Add wet ingredients, make sure to mash the banana.
Mix all ingredients until smooth.
Add in chocolate chips, *** Note chocolate chips will sink to bottom of bread while baking because of the consistency of the ingredients.
Add to muffin loaf pan or you can use a muffin pan.
Preheat oven to 350, bake for about 30-40 min.
Combine all dry ingredients.
Add wet ingredients, make sure to mash the banana.
Mix all ingredients until smooth.
Add in chocolate chips, *** Note chocolate chips will sink to bottom of bread while baking because of the consistency of the ingredients.
Add to muffin loaf pan or you can use a muffin pan.
